Plenty, by Yotam Ottolenghi

       So I haven't been around for a bit, but I have a new goal; cut out meat from my diet, and severely limit my dairy intake. If you don't have your health, what do you have? SO, I will be doing a 'Julie and Julia' take on this cookbook (no reason for this one in particular, I stole it from my parent's house because I didn't want to have to buy my own cookbook) because I don't know very many vegan/vegetarian recipes. While I am going from this cookbook, I will be replacing certain ingredients and omitting others, because I am so frugal. First post should be up tonight after I make dinner. I hope you enjoy, and are inspired!
